Kolokithakia Giachni with Loukaniko and Patates (Courgettes with Sausage and Potatoes)

This hearty, comforting dish features zucchini, sausage, and potatoes simmered in a delicious, smoky tomato sauce. Perfect for a cozy meal!

Ingredients:

  • 500g zucchini, sliced into rounds
  • 300g traditional sausage, sliced
  • 2 red bell peppers, sliced and halved
  • 2 onions, finely chopped
  • 1 garlic clove, finely chopped
  • 3 potatoes, diced
  • 3 ripe tomatoes, grated
  • 1 tablespoon tomato paste
  • 1 bouillon cube (optional)
  • A pinch of smoked paprika
  • A little chili flakes (optional, to taste)
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh parsley, chopped (for garnish)

Instructions:

Prepare the Ingredients:

  • Slice the zucchini, sausage, and bell peppers. Dice the potatoes.
  • Finely chop the onions, garlic, and parsley. Grate the tomatoes.

Cook the Sausage:

  • In a large pot, heat a little olive oil and sauté the sausage slices until golden brown.

Sauté Vegetables:

  • Add the chopped onions and garlic to the pot and cook until softened.
  • Add the bell peppers, zucchini, and potatoes. Sauté for a few more minutes to combine the flavors.

Make the Sauce:

  • Stir in the grated tomatoes and tomato paste, followed by the bouillon cube, smoked paprika, chili flakes (if using), salt, and pepper.
  • Add enough water to cover the vegetables, then stir to combine.

Simmer:

  • Bring the mixture to a boil, then lower the heat and simmer for 30-40 minutes, or until the vegetables are tender and the sauce has thickened.

Finish and Serve:

  • Stir in the chopped parsley just before serving.
  • Serve hot and enjoy the rich, comforting flavors of this traditional Greek dish!
