Ingredients (for 2-3 jars of 250 ml):
- 8-10 medium-sized Florina peppers (peeled and finely chopped)
- 1 large red onion (finely chopped)
- 3 large garlic cloves (finely chopped)
- 2 tablespoons sweet paprika
- 4 tablespoons white balsamic vinegar (original recipe used lemon juice)
- 2 tablespoons dark brown sugar
- 4 tablespoons olive oil
- A pinch of salt
Instructions:
Prepare the Peppers:
- Peel the Florina peppers by roasting them under the grill until they develop dark spots.
- After roasting, place them in a plastic food bag and let them rest for 15-20 minutes.
- Once cooled, carefully peel off the skin to reveal the soft pepper flesh.
Cook the Sauce:
- In a saucepan, combine the peeled peppers, chopped onion, garlic, paprika, vinegar, sugar, olive oil, and salt.
- Start cooking over low heat, stirring until the sugar dissolves and the ingredients soften.
