Salsa Piperiás (Pepper Sauce)

This homemade pepper sauce is a versatile and flavorful addition to your kitchen, perfect for pasta, rice, bruschetta, or as a dip. The smoky, sweet, and tangy flavors come together beautifully.

Ingredients (for 2-3 jars of 250 ml):

  • 8-10 medium-sized Florina peppers (peeled and finely chopped)
  • 1 large red onion (finely chopped)
  • 3 large garlic cloves (finely chopped)
  • 2 tablespoons sweet paprika
  • 4 tablespoons white balsamic vinegar (original recipe used lemon juice)
  • 2 tablespoons dark brown sugar
  • 4 tablespoons olive oil
  • A pinch of salt

Instructions:

Prepare the Peppers:

  • Peel the Florina peppers by roasting them under the grill until they develop dark spots.
  • After roasting, place them in a plastic food bag and let them rest for 15-20 minutes.
  • Once cooled, carefully peel off the skin to reveal the soft pepper flesh.

Cook the Sauce:

  • In a saucepan, combine the peeled peppers, chopped onion, garlic, paprika, vinegar, sugar, olive oil, and salt.
  • Start cooking over low heat, stirring until the sugar dissolves and the ingredients soften.
  • Increase the heat slightly and continue cooking, stirring occasionally, for 15-25 minutes until the vegetables are soft and the liquid evaporates.

Adjust the Consistency:

  • If you prefer a thicker sauce, lower the heat and let it simmer until the desired consistency is reached.

Jar the Sauce:

  • Once the sauce is ready, remove it from the heat and distribute it into 2-3 sterilized jars.
  • Seal the jars and place them upside down on a towel until they cool completely.

Storage and Use:

  • Store the jars in a cool, dark place for the flavors to develop. Let them rest before opening.
  • The sauce is perfect for dipping, spreading on bruschetta with cheese, or adding a punch to pasta, rice, or a basic tomato sauce.

Enjoy the rich and smoky flavors of this homemade pepper sauce in various dishes!
