Pilaf with Chicken Milanese (Πιλάφι με Κοτόπουλο Μιλανέζα)

Ingredients:

  • 2 chicken breasts, cut into thin slices (or chicken thighs if preferred)
  • 1 cup rice, short-grain (ideal for pilaf)
  • 1 medium onion, finely chopped
  • 2 tbsp olive oil
  • 1/2 cup white wine (optional, but adds great flavor)
  • 2 cups chicken broth (or water)
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 tsp paprika (optional, for a bit of extra flavor)
  • Fresh parsley (optional, for garnish)
  • 1 cup grated Parmesan cheese, for topping

For the Chicken Milanese:

  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Salt and pepper for seasoning
  • Olive oil, for frying

Instructions:

Prepare the Chicken Milanese:

  • Season the chicken slices with salt and pepper.
  • Dredge each slice of chicken in flour, dip into the beaten eggs, and then coat with breadcrumbs.
  • Heat a generous amount of olive oil in a frying pan over medium-high heat. Fry the chicken slices until golden brown and crispy on both sides, about 3-4 minutes per side. Remove from the pan and set aside to drain on paper towels.

Cook the Pilaf:
