Hello friends! Today, I’m making a delicious and tender Pork Roll with Potatoes in a Dutch Oven. It’s one of those comforting dishes that fills the house with wonderful aromas and warms the heart. Perfect for a family meal or a Sunday feast!

Ingredients:
- 1.5 kg pork shoulder (or pork loin if you prefer)
- 4-5 medium potatoes, peeled and cut into thick wedges
- 4-5 garlic cloves, sliced
- 1 onion, quartered
- 1 lemon, juiced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup white wine (or water, if preferred)
- Fresh rosemary (optional, for added flavor)
- 1/2 cup chicken or vegetable broth (optional, for extra moisture)
Instructions:
Prepare the pork roll:
- Start by making small slits in the pork shoulder using a sharp knife. Insert the garlic slices into the slits, making sure to spread them throughout the meat. This will give the pork a wonderful depth of flavor.
- Rub the entire pork roll with olive oil, and season generously with salt, pepper, dried thyme, and dried oregano. Add a squeeze of lemon juice for a hint of freshness and tang.
Prepare the potatoes:
- Peel and cut the potatoes into thick wedges. Place them in a bowl and toss with a little olive oil, salt, pepper, and dried herbs to coat them evenly.
Assemble in the Dutch oven:
- Preheat your oven to 180°C (350°F).
- Place the onion quarters in the bottom of a Dutch oven or roasting pan. Arrange the potato wedges around the pork roll.
- Pour the white wine (or water) and broth (if using) into the pan to help keep everything moist while cooking.
- Optionally, add a few sprigs of rosemary to enhance the flavor as the pork slow-cooks.
Cook the pork roll:
- Cover the Dutch oven with its lid or tightly with aluminum foil and place it in the preheated oven.
- Roast for about 2 to 2.5 hours, or until the pork is tender and easily pulls apart. Check every 45 minutes or so and baste the meat and potatoes with the juices in the pan to keep everything moist.
- If you prefer crispy potatoes, uncover the Dutch oven during the last 20 minutes of cooking to allow the potatoes to brown and crisp up.
