Tortilla Crepes with Minced Meat and Tomato Sauce

Here’s a recipe for a comforting and flavorful dish that’s perfect for a hearty family meal. These tortilla crepes are stuffed with spiced minced meat, topped with rich tomato sauce, and baked until golden and bubbling. A dish to delight everyone at the table!

Ingredients

For the tortillas:

  • 10 ready-made tortillas

For the minced meat filling:

  • 500g minced beef (or a mix of beef and pork)
  • 1 large onion, grated
  • 3 ripe tomatoes, grated
  • 1/2 cup tomato juice
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1/2 cup grated kefalotyri cheese (or Parmesan)

For the tomato sauce:

  • 1 small onion, finely grated
  • 3 ripe tomatoes, grated
  • 1/2 cup tomato juice
  • 1 teaspoon sugar
  • Salt and pepper to taste

For topping:

  • 1/2 cup grated kefalotyri cheese (or your favorite cheese)

How to Make It

Prepare the Minced Meat Filling:

  • In a pan, heat a splash of olive oil over medium heat. Add the grated onion and sauté until softened and fragrant.
  • Add the minced meat and cook, stirring, until browned.
  • Stir in the grated tomatoes, tomato juice, sugar, salt, pepper, and oregano. Let the mixture simmer until most of the liquid has evaporated, leaving a thick and saucy filling.
  • Remove from heat and mix in the grated kefalotyri cheese. Set aside.

Make the Tomato Sauce:

  • In another pan, heat a little olive oil and sauté the grated onion.
  • Add the grated tomatoes, tomato juice, sugar, salt, and pepper.
  • Let the sauce simmer for 10–15 minutes until slightly thickened.

Assemble the Tortilla Crepes:

  • Take each tortilla and fill it with a generous spoonful of the minced meat mixture. Roll it tightly and place it seam-side down in a baking dish.
  • Repeat with the remaining tortillas and filling.

Top and Bake:

  • Pour the tomato sauce over the rolled tortillas, ensuring they’re well-coated.
  • Sprinkle the grated kefalotyri cheese evenly on top.
  • Bake in a preheated oven at 150°C (300°F) for about 45 minutes, or until the cheese is golden and bubbly.
