Μηλόπιτα (Apple Cake)

This delicious apple cake is the perfect way to start your day with a sweet touch. Soft, fluffy, and packed with the goodness of fresh apples, it's a great breakfast treat!

Ingredients:

For a springform pan (26 or 28 cm):

  • 750 grams of apples (about 8 apples, depending on size)
  • 125 grams of butter (room temperature)
  • 100 grams of sugar
  • 1 vanilla
  • A pinch of salt
  • 3 medium-sized eggs
  • 200 grams of all-purpose flour
  • 2 tablespoons of milk
  • 2 level teaspoons of baking powder
  • Fresh lemon juice (or lemon oil, optional)

For the glaze:

  • 2 tablespoons of apricot or peach jam
  • 1 tablespoon of water

Instructions:

Prepare the pan: Grease the springform pan and dust with a little flour.

Prepare the apples: Slice the apples and drizzle some lemon juice over them to prevent browning.

Make the batter:

  • Place the butter in a mixer and beat until it becomes creamy and fluffy.
  • Gradually add the sugar, vanilla, and lemon oil (if using), and continue mixing until everything is well combined.
  • Add the eggs, one at a time, and mix on high speed for about 30 seconds.
  • Slowly add the flour, baking powder, and milk, mixing at medium speed until smooth.

Assemble the cake: Pour the batter into the prepared pan. Arrange the apple slices evenly over the top.

Bake: Place the cake in a preheated oven at 160°C (320°F) with fan or 180°C (350°F) for about 45 minutes. Check for doneness by inserting a knife; it should come out clean.

Glaze (optional): Mix the jam and water and gently heat until melted. Brush the mixture over the baked cake for a nice glossy finish.
