Beef Roulades: A Perfect Family Meal

Start with thinly sliced beef from the round or sirloin. The pieces should be large enough to roll. Wash the meat and pat it dry with a paper towel. Coat each piece with a layer of mustard, which not only adds a bit of spice but also helps tenderize the meat. Over the mustard, add a layer of thinly sliced turkey ham or dry-cured meat. Then, prepare the filling by sautéing onion strips in butter until golden, seasoning with salt, pepper, vegeta, and paprika. Once it cools, add freshly chopped parsley and mix it all together. Spread this onion mixture over the meat.

Now, it’s time to assemble the roulades. Fold the sides of the beef inward, and then roll it up tightly, ensuring the filling stays inside. You can secure them with toothpicks if you prefer, but if you roll them properly, they’ll hold together just fine.

Heat a deep pan or skillet with a bit of butter and oil. Place the roulades seam-side down in the pan to sear them. Brown the beef on all sides to lock in the juices. This helps the meat stay tender and flavorful as it cooks.

Once the roulades are browned, add chopped carrots, celery, onion, garlic, fresh tomatoes, and bell peppers if you have them. Stir in tomato paste and pour in enough beef broth (or water with a bouillon cube) to cover the roulades. Cover the pan and transfer it to a preheated oven at 200°C (400°F). Bake for about 30 minutes, then reduce the heat to 150°C (300°F) and cook for an additional hour. Check occasionally to ensure there’s enough liquid, adding more if needed.

When the roulades are done, remove them from the pan, and strain the sauce through a fine sieve. If you want a thicker texture, you can mash the vegetables with a spoon or blend them with an immersion blender. Add a little cream and a piece of butter for extra richness, and season to taste. Return the roulades to the sauce and let them simmer for a few more minutes to absorb all the flavors.

Serve these delicious roulades with a side of mashed potatoes, rice, or egg noodles. A fresh salad or roasted vegetables would complete the meal perfectly.
