Instructions:
- Prep the chestnuts: Score each chestnut with a cross (for easier peeling). Boil for 20–30 minutes, peel while hot, and mash.
- Cook the purée: In a pot, combine mashed chestnuts, milk, vanilla sugar, and regular sugar (plus rum essence if using). Simmer until the chestnuts absorb the milk. If too thick, add more milk; if too thin, continue cooking while stirring to avoid sticking.
- Serve with style: Divide into cups or bowls and top with freshly whipped cream.
