Traditional Poppy Seed Strudel

Ingredients:

For the Dough:

  • 30 ml warm water
  • 1 tsp sugar
  • 1 tsp flour
  • 1 packet (10 g) dry yeast
  • 2 egg yolks
  • 50 g sugar
  • 1 tsp salt
  • 50 g margarine
  • 250 ml warm milk
  • 1 kg flour (add gradually)
  • 150–200 ml warm water

For the Filling:

  • 400 g poppy seeds
  • 250 ml almost boiling milk
  • 50–100 g sugar (adjust based on taste)

Optional for the 4th Strudel:

  • Sour cream as filling

Instructions:

  1. Activate the yeast: In a small bowl, mix warm water, sugar, flour, and yeast. Let sit for 10 minutes until frothy.
  2. Prepare the dough: In a large bowl, whisk egg yolks, sugar, salt, and margarine. Add the activated yeast and warm milk. Gradually mix in the flour and warm water until a smooth, soft dough forms.
  3. Let it rise: Shape the dough into a ball, lightly flour your work surface, and place the dough on it. Cover with a cloth and let it rise for 1 hour.
  4. Make the filling: Combine poppy seeds with hot milk and sugar, stirring to form a smooth mixture. Let cool.
  5. Shape the strudel: Divide the dough into 4 equal parts. Roll each into a rectangle, spread the poppy seed filling evenly (enough for 3 strudels), and roll tightly. For the 4th strudel, use sour cream as a fun twist!
  6. Final rise: Place the strudels on a parchment-lined baking sheet. Let rise for 30 minutes. Brush with egg white for a golden crust.
  7. Bake to perfection: Preheat your oven to 180°C (356°F) and bake for about 40 minutes until golden brown.
