Ingredients:
10-12 ready-made crepes (or make your own if you're feeling adventurous!)For the Minced Meat Filling:

- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1-2 ripe tomatoes, grated
- 1/2 teaspoon oregano
- Salt and pepper to taste

- 300g fresh spinach, chopped
- 100g bacon, chopped
- 100g feta cheese, crumbled
- Salt and pepper to taste
- 2 tomatoes, grated or blended
- 1 small onion, finely chopped
- 1 tablespoon olive oil
- Salt, pepper, and a pinch of sugar
- Freshly grated kefalotyri cheese (or parmesan as an alternative)
How to Make These Irresistible Crepes:
Prepare the Fillings:
Minced Meat Filling:- In a large pan, heat olive oil and sauté the onions and garlic until they’re soft. Add the minced meat and cook it until browned. Stir in the grated tomatoes, oregano, salt, and pepper, and let it simmer until the mixture thickens and the flavors blend beautifully.
- In another pan, cook the bacon until crispy. Add the chopped spinach and sauté until wilted. Crumble the feta cheese into the mix, season with salt and pepper, and set it aside.
Make the Tomato Sauce:
Heat olive oil in a small saucepan, add the chopped onions, and sauté until golden. Stir in the grated tomatoes, salt, pepper, and a pinch of sugar to balance the acidity. Let it cook for about 10 minutes, then set aside.
