Next, melt 500 grams of butter and mix it into the biscuit and sugar combination. Stir everything well until fully incorporated. This forms the base of your dough, which you will divide into five parts.
Now, let’s move on to the first part: the coconut layer. Take 150 grams of shredded coconut and mix it into one of the dough portions. Divide this mixture in half, and in one half, add 100 grams of melted chocolate. Place one sheet of wafer on a flat surface, spread the light-colored mixture on it using a rolling pin, and press it down evenly. Then, place another wafer on top and spread the dark chocolate mixture over it. Finish off with the third sheet of wafer on top. Press everything down gently, wrap it in foil, and refrigerate overnight. This part of the dessert will be wonderfully firm and flavorful by the next day.
For the second part of the dessert, we’ll make raisin squares. Take one of the dough portions and mix in 100 grams of raisins. Then, line a 30 x 10 cm baking dish with plastic wrap and press the mixture into the dish, smoothing it out evenly. Cover and refrigerate overnight. In the morning, cut the mixture into squares, dip them in melted chocolate, and decorate them however you like. Let the chocolate set in the fridge, and your raisin-filled squares will be ready to enjoy.
Next up, we have the Rafaelo balls—a coconut lover’s dream. Take another portion of the dough and add 150 grams of finely ground or chopped wafer sticks with hazelnut flavor, along with 100 grams of whole hazelnuts. Mix everything together, then form small balls. Place a hazelnut inside each ball, then refrigerate them overnight. The next morning, dip the balls in melted chocolate, decorate them to your liking, and let them set in the fridge.
For the fourth part, we’re making bars with apricots. Take one portion of the dough and add 8 tablespoons of ground walnuts and 200 grams of dried apricots. Soak the apricots in 150 ml of hot water until soft, then blend them into a smooth paste using a blender or immersion mixer. Add the apricot mixture to your dough, stir everything together, and spread it over one sheet of wafer. Refrigerate overnight, then in the morning, drizzle with 100 grams of melted chocolate. Let it cool and harden in the fridge, and then slice it as desired.
Finally, for the last part, we’ll make a rolled dessert. Take the remaining portion of dough and mix it with 10 tablespoons of ground walnuts. Place a whole sheet of wafer under two damp towels until the wafer softens. Spread the dough mixture over the softened wafer, roll it up tightly, and refrigerate overnight. The next day, slice the roll into thick slices for a beautiful, nutty treat.
A quick note: If you find that the dough is too stiff, add a little extra milk. You can only do this after dividing the mixture to ensure the right consistency. The amount of milk you need will depend on the biscuits you use and how much they absorb.
