Ingredients:
For the Syrup:
- 3 cups sugar
- 2 cups water
- 1 tablespoon honey
- 1 tablespoon glucose syrup
- 1 tablespoon lemon juice
For the Dough:
- 2 cups water
- 1 ½ cups all-purpose flour (sifted)
- 1 cup fine semolina
- 2 tablespoons butter
- 1 teaspoon sugar
- A pinch of salt
- 3 eggs
Instructions:
Prepare the Syrup:
- In a saucepan, combine the sugar, water, honey, glucose syrup, and lemon juice. Bring to a boil and let it simmer for 10 minutes. Once done, remove from heat and set aside to cool.
Make the Dough:
- In a large pot, bring 2 cups of water to a boil. Add the sifted flour, semolina, butter, sugar, and salt. Stir constantly over medium heat for 4-5 minutes until the dough starts to pull away from the sides of the pot and forms a cohesive mass.
- Remove the pot from the heat and allow the dough to cool slightly. Add one egg at a time, mixing well after each addition with a mixer. The dough should be soft and smooth.
Shape and Fry the Doughnuts:
- Transfer the dough into a piping bag fitted with a large round tip.
- Heat sunflower oil in a deep frying pan over medium heat. Pipe 3-4 cm long pieces of dough into the hot oil, cutting them off with oiled scissors.
- Fry the doughnuts until golden brown, turning them as needed for even browning.
Soak in Syrup:
- Once golden and crispy, remove the doughnuts from the oil using a slotted spoon. Immediately place them into the prepared syrup for 5 minutes to soak.
- Repeat the frying and soaking process until all the dough is used.
