A classic Greek dish, Kleftiko is a slow-cooked, tender lamb or goat stew wrapped in foil with aromatic herbs and vegetables. Traditionally cooked in a sealed pit, this version brings the rustic flavors to your oven. Here's how to make it!
Ingredients:
- 4 portions of lamb, goat, or veal (about 1.2 kg)
- 250g mixed herbs (oregano, thyme, rosemary)
- 1 bell pepper (preferably Florina pepper), diced
- 8 small or large potatoes, cut into chunks
- 8 pieces of kefalotyri cheese or any firm cheese
- 4 sprigs of fresh oregano
- 4 garlic cloves, whole or garlic powder
- 4 mini tomatoes (optional), halved
- Salt, for seasoning the meat
Marinade:
- 4 tbsp olive oil
- Juice of 1 lemon or a bit of white wine
- 1/2 vegetable stock cube, crumbled
- 1 tsp sweet paprika
- 1 tsp oregano
- Pepper to taste
- A drizzle of honey or grape molasses (petimezi)
Instructions:
Prepare the Marinade:
- In a small bowl, combine olive oil, lemon juice (or white wine), crumbled vegetable stock cube, paprika, oregano, pepper, and honey (or petimezi). Mix well.
Marinate the Meat:
- Season the meat with salt and rub the marinade over the lamb or goat. Make sure the meat is well-coated. Let it marinate for at least 2-3 hours, or overnight for more flavor.
Prepare the Dish:
- Preheat the oven to 250°C (480°F).
- Lay out a large sheet of aluminum foil and a piece of parchment paper on top.
- On the foil, add the marinated meat, diced peppers, potatoes, cheese pieces, whole garlic cloves, and fresh oregano. If you have mini tomatoes, add them too.
- Drizzle any remaining marinade over the vegetables and meat.
Wrap and Cook:
- Fold the foil around the meat and vegetables tightly to seal it. This will trap the juices and help cook everything evenly.
- Place the wrapped packet in the lower part of the oven and bake for about 1.5 hours.
Serve:
- Once done, carefully open the foil. Serve the Kleftiko with the tender meat, cheese, and vegetables.
Tips:
- If you want a more intense flavor, add extra herbs or a splash of wine to the marinade.
- Serve with a side of bread to soak up the delicious juices!
