Ingredients:
- 4 large eggplants (aubergines)
- 2 medium onions, finely sliced
- 3 ripe tomatoes, chopped or grated
- 4 cloves garlic, minced
- 1/4 cup olive oil (for frying)
- 1/4 cup olive oil (for baking)
- 1 teaspoon sugar (to balance the acidity)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Lemon wedges (optional, for serving)
Instructions:
Prepare the Eggplants:
- Cut the eggplants in half lengthwise and scoop out the flesh, leaving a shell. Salt the eggplant halves and set them aside for 30 minutes to remove any bitterness. After 30 minutes, rinse them under cold water and pat them dry with a towel.
Cook the Filling:
- In a pan, heat 1/4 cup olive oil over medium heat. Add the sliced onions and sauté until soft and golden, about 10 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the chopped tomatoes, sugar, salt, and pepper. Cook for about 15-20 minutes until the mixture thickens and the flavors meld together. Taste and adjust seasoning as needed.
Stuff the Eggplants:
- Preheat your oven to 180°C (350°F).
- Stuff the eggplant halves with the cooked filling, making sure to pack it in generously. Place the stuffed eggplants in a baking dish.
Bake:
- Drizzle the stuffed eggplants with the remaining 1/4 cup of olive oil. Add a little water to the bottom of the dish to help steam the eggplants while baking.
- Cover the dish with foil and bake for about 45-50 minutes, until the eggplants are tender and golden.
Serve:
