Here's a fun and easy recipe for Lazy Pastitsio (Παστίτσιο της Τεμπέλας), also known as Baked Pasta with Mince. This version is quicker than the traditional one but still super satisfying and cheesy!
Ingredients:
- 400g rigatoni pasta (or any pasta you prefer)
- 500g ground beef or pork (or a mix of both)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 can crushed tomatoes (400g)
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon cinnamon (optional, for a more traditional flavor)
- Salt and pepper, to taste
- 1 cup mixed grated cheeses (such as mozzarella, parmesan, or cheddar)
- 1/2 cup béchamel sauce (optional, if you want it extra creamy)
- Olive oil, for frying
Instructions:
Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the rigatoni according to the package instructions until al dente. Drain and set aside.
Prepare the Meat Sauce:
- In a large pan, heat a bit of olive oil over medium heat. Add the chopped onion and minced garlic and sauté for 3-4 minutes until softened.
- Add the ground meat and cook until browned. Break it up into small pieces with a spoon as it cooks.
- Stir in the crushed tomatoes, tomato paste, oregano, and cinnamon (if using). Season with salt and pepper. Let the sauce simmer for 10-15 minutes until it thickens and becomes rich in flavor.
Assemble the Dish:
- Preheat your oven to 180°C (350°F).
- In a baking dish, layer half of the cooked pasta, then spread half of the meat sauce over it. Sprinkle with some of the grated cheese.
- Add the remaining pasta on top, followed by the rest of the meat sauce and another generous sprinkle of cheese.
Bake:
- If you're using béchamel sauce, spread a thin layer on top for an extra creamy touch.
- Bake in the preheated oven for 20-25 minutes until the top is golden and bubbly.
