Ingredients:
- Leftover ground meat (about 150-200g, depending on how much you have)
- 2 servings of pasta (any kind you like)
- Grated kefalotyri cheese (to taste)
- Fresh greens from the garden (whatever you have — I used some wild greens I picked)
- 2 eggs (from our chickens 🐔)
- Olive oil
- Salt
- Vinegar (for one salad)
- Lemon (for the other salad)
- Olives (to garnish)
Instructions:
Cook the Pasta: Boil the pasta in salted water according to the package instructions. Once cooked, drain and set aside.
Reheat the Ground Meat: Take the leftover ground meat (which already has seasoning from the previous dish) and heat it up in a pan with a little olive oil. If it's too dry, you can add a splash of water or a drizzle of olive oil to loosen it up.
Prepare the Eggs: While the meat is warming up, crack the eggs into a small bowl and whisk them lightly. Once the meat is heated, pour the eggs over the top, stirring gently to scramble and cook them into the meat mixture. This adds richness and flavor to the dish.
Toss the Pasta: Add the cooked pasta to the meat and egg mixture, tossing everything together so the pasta is coated with the delicious sauce.
Finish with Cheese: Sprinkle the grated kefalotyri cheese over the top and stir it through to melt into the pasta and meat. The cheese gives it a creamy, salty flavor that's perfect.
