Perfect Chicken Bites with Coleslaw and a Side of Gibanica

They say this chicken is better than “theirs” and just might become your favorite! 🙈 Here’s how to make it, along with a crunchy coleslaw and a comforting gibanica.


Chicken Bites

Prep the Chicken:

Take chicken breasts, wash and pat them dry. Trim any excess fat and cut them into bite-sized cubes.

Marinate:

In a bowl, mix:1 cup milk
1 tablespoon yogurt
½ teaspoon Tabasco or another hot sauce
A pinch of paprika
Salt and pepper to taste
Add the chicken pieces, stir to coat, cover, and refrigerate for at least 30 minutes.

Breading:

In one bowl, combine:2 tablespoons flour
300 g breadcrumbs
200 g cornflakes (crushed slightly with garlic and onion powder in a food processor).
In another bowl, whisk together:
  1. 2 eggs
  2. 1 small cup of milk
  3. A pinch of paprika, salt, and pepper.
Coat the Chicken:
  1. Drain the chicken pieces from the marinade.
  2. Dip each piece in the egg mixture, then in the breadcrumb mixture. Repeat the process for extra crunch (egg → breadcrumbs).
  3. Let the coated pieces rest on parchment paper for 10 minutes.
Fry: Heat oil in a deep pan and fry the chicken on medium heat until golden brown.

Crunchy Coleslaw

  • Combine in a bowl:
    • ½ head of finely chopped cabbage
    • 2–3 grated carrots
    • 1 thinly sliced onion
    • A handful of chopped parsley
  • Dress with:
    • Salt, pepper, 1 tablespoon mayonnaise, juice of ½ lemon (or 1 tablespoon vinegar), and 1 teaspoon mustard.
  • Mix well and refrigerate briefly before serving.

Dipping Sauce

  • Whisk together:
    • Mayonnaise
    • Ketchup
    • Salt, pepper, a dash of curry powder, and ½ teaspoon sugar.

Quick Gibanica

Mix the Batter:

Combine:
1 cup milk
½ cup kajmak (or a similar cream cheese)
200 g cheese (crumbled)
3 eggs
½ cup sparkling water
Salt, pepper, and a dash of baking powder.

Layer the Phyllo:

Dip each sheet of phyllo pastry in the mixture and layer them in a greased baking pan. Pour any leftover mixture over the top. If needed, whisk 1 egg with milk and oil to use as the final topping

Bake: At 170°C (340°F) for about 45 minutes, until golden and set.
