Puff Pastry Cake with Creamy Custard Filling

This puff pastry cake with custard filling is a delightful treat that’s sure to impress. The crispy layers of puff pastry combined with a rich and creamy custard make it a perfect dessert for any occasion. Here’s how to prepare it:


Ingredients:

  • 2 sheets of puff pastry (250g each)
  • 7 eggs
  • 200g cornstarch (cornflour)
  • 1 liter milk
  • 1 liter water
  • 5 tablespoons all-purpose flour (you can use regular flour)
  • 3 packets of vanilla sugar
  • 20 tablespoons sugar

Directions:

Prepare the Puff Pastry: Preheat your oven to 180°C (350°F). Line your baking sheet with parchment paper. Place the first sheet of puff pastry on the sheet, prick it with a fork, and brush it lightly with water. Bake in the preheated oven for about 10 minutes, or until golden brown.

Prepare the Second Sheet of Puff Pastry: For the second puff pastry layer, place it on a baking sheet, cut it into the desired size, prick it with a fork, and brush with water. Bake it the same way as the first, until golden brown.

Make the Custard Filling: While the puff pastry layers are baking, prepare the custard filling. Start by separating the egg yolks from the egg whites. Beat the egg yolks with 10 tablespoons of sugar until creamy and light.

  1. In a separate bowl, mix the cornstarch, flour, and 5 tablespoons of sugar. Add 300ml of milk to this mixture and whisk until smooth without lumps.
  2. Pour this mixture into the egg yolks and whisk together. In a large pot, bring 1 liter of water and the remaining milk to a boil. Gradually pour the egg mixture into the boiling liquid while stirring constantly. Continue to cook until the mixture thickens to a pudding-like consistency.

Whisk the Egg Whites: In a separate bowl, whisk the egg whites with 5 tablespoons of sugar until stiff peaks form.

Combine the Cream and Egg Whites: Once your custard has thickened, gently fold in half of the whipped egg whites, stirring carefully to combine. Then fold in the remaining egg whites until the mixture is smooth and airy.

Assemble the Cake: Place the first puff pastry layer in the bottom of your baking dish. Pour the custard filling over the puff pastry. Cut the second baked puff pastry into small cubes and arrange them on top of the custard.

Let It Cool: Allow the cake to cool completely before serving. The puff pastry will stay crispy while the custard becomes perfectly creamy and rich.
