Refreshing Tortellini Pasta Salad with Tuna and Veggies

When the heat makes turning on the stove a chore, a chilled pasta salad is the perfect solution. This tortellini salad combines fresh vegetables, savory tuna, and creamy mayonnaise for a light, delicious meal that’s easy to prepare and enjoy.


Ingredients

  • 400g tortellini (cheese-filled or your choice)
  • 1 can of tuna in olive oil or water, drained
  • 2 medium tomatoes, diced
  • 1 cucumber, chopped into bite-sized pieces
  • A handful of black olives, sliced
  • 3–4 tablespoons of mayonnaise (adjust to taste)
  • 1 tablespoon of olive oil
  • Salt and freshly ground black pepper to taste
  • Optional: A sprinkle of fresh parsley or basil for garnish

How to Make It

Cook the Tortellini:

  • Boil the tortellini according to the package instructions. Drain, rinse under cold water to cool them down, and drizzle with a little olive oil to prevent sticking.

Prepare the Ingredients:

  • While the tortellini cool, chop the tomatoes and cucumber, and slice the olives.

Mix the Salad:

  • In a large bowl, combine the cooled tortellini, tuna, chopped vegetables, and olives. Gently toss to mix evenly.

Add the Dressing:

  • Stir in the mayonnaise, adding a little at a time until the salad reaches your preferred level of creaminess. Season with salt and pepper to taste.

Chill and Serve:
