For the Potato Rösti:
- Potatoes (same size so they cook evenly)

For the Roasted Chicken Wings:
- 1.5 kg chicken wings
- 1 teaspoon sweet paprika
- 1 teaspoon seasoning paprika
- 1 teaspoon ground ginger
- 1 teaspoon garlic powder
- Zest and juice of 1 lemon
- 3 tablespoons Tabasco sauce (or to taste)
- 1/2 cup soy sauce
- 1 teaspoon ground cinnamon
- Chilli peppers (optional, for heat)
Instructions:
Making the Potato Rösti:
Start with potatoes of equal size so they cook evenly. Peel them, then soak them in cold water for a few minutes. Once they’re soaked, boil the potatoes in salted water for about 4 minutes after the water starts boiling. You don’t want them to be too soft, just enough to cook them slightly. Drain the potatoes and let them cool completely. Once cool, pop them in the fridge for about 10 minutes.
Once they’re chilled, grate the potatoes using the large holes of a grater. Season them with salt, pepper, and, if you like, finely chopped rosemary for extra fragrance. Mix everything together, then shape the potatoes into small patties or whichever shape you prefer. If the mixture isn’t sticking together well, use a bit of cornstarch or breadcrumbs to bind it.
Next, sprinkle your cutting board with cornstarch (or breadcrumbs, if you prefer), and gently press the patties onto the surface to avoid them sticking. Place them on a baking tray lined with parchment paper, drizzle with extra virgin olive oil, and bake in a preheated oven at 200°C for about 12-15 minutes. During the last 5 minutes of baking, switch to the grill setting to get them crispy. Flip the rösti carefully halfway through using a spatula and spoon to avoid breaking them.

Toss the chicken wings in the marinade, making sure they are coated evenly, and let them sit in the fridge for a few hours (the longer they marinate, the more flavorful they’ll be).
When you're ready to cook, preheat your oven to 200°C. Line a baking sheet with parchment paper and arrange the chicken wings on it in a single layer. Roast the wings for 35-40 minutes, or until they’re golden brown and crispy. You can flip them halfway through cooking to make sure they cook evenly.
Tzatziki Sauce:

If not, here’s a quick refresher: mix together Greek yogurt, grated cucumber (squeezed to remove excess water), garlic, a little lemon juice, olive oil, and fresh dill.
