I make this one all the time, especially when someone drops by unexpectedly! It’s super quick, and you can even switch it up with apples for a change. It's the kind of recipe that saves you when you need a homemade treat, but only have an hour or two before guests arrive.
Ingredients:
- 5 eggs
- 5 tablespoons sugar
- 1 vanilla sugar packet
- 1 teaspoon baking powder
- 5 tablespoons flour
- Jam (I love plum jam, especially because my daughter loves it, but you can use whatever jam you like)
- Powdered sugar (for dusting)
Instructions:
Start by separating the egg whites and yolks. Beat the egg whites until they form stiff peaks. Gradually add the sugar and vanilla sugar while you continue mixing, making sure the sugar dissolves well.
Once your egg whites are nice and fluffy, add in the egg yolks and mix them in gently. Then, sift in the flour and baking powder and mix everything together for about 3-4 minutes. You want a smooth, airy batter.
Line a baking tray with parchment paper and pour the batter onto it. Spread it out evenly, and then pop it in a preheated oven at 200°C (about 400°F). Bake for 10 minutes. Since ovens can vary, check with a toothpick—if it comes out clean, it’s done. If not, give it another 5 minutes.
Once the cake is baked, take it out and cover it with another sheet of parchment paper. Gently flip it over and peel off the original baking paper. Now, while it’s still warm, roll the cake up with the clean parchment paper, and leave it to cool like that. This helps it keep its shape once you’re ready to fill it.
When the cake is cool, carefully unroll it and spread your favorite jam (plum jam is my go-to!) across the surface. Then, roll it back up again and sprinkle with powdered sugar for that perfect finishing touch.
This cake is so simple, but it’s always a hit with guests. It’s light, fluffy, and just the right amount of sweetness, plus you can easily change up the filling. Enjoy!
