Chocolate Delight with Biscotti, Pastry Cream, Cherry Jam, and Maraschino Cherries

After hearing about the new measures, I thought it's time to sweeten up our lives a little! 😊 Here's a dessert that I came up with: a Chocolate Delight featuring layers of crispy biscuits, creamy chocolate pastry cream, cherry jam, and topped with maraschino cherries. It’s the perfect treat to lift your spirits and share with loved ones.


Ingredients:

For the Biscuit Base:

  • 200g digestive biscuits or any biscuits of your choice (crumbled)
  • 2-3 tablespoons melted butter

For the Chocolate Pastry Cream:

  • 500ml whole milk
  • 4 egg yolks
  • 100g sugar
  • 1 tablespoon cornflour
  • 200g dark chocolate (chopped)
  • 1 teaspoon vanilla extract

For the Cherry Jam Layer:

  • 4 tablespoons cherry jam (or fresh cherry compote)

For the Topping:

  • Maraschino cherries (for garnish)

Instructions:

Prepare the Biscuit Base:

  • Start by crushing the biscuits into fine crumbs (you can use a food processor or a rolling pin). Mix the crumbled biscuits with the melted butter until they are well combined.
  • Press the biscuit mixture into the base of a serving dish or individual dessert cups. Set aside in the fridge to firm up while you prepare the rest.

Make the Chocolate Pastry Cream:

  • In a saucepan, heat the milk over medium heat until it just begins to simmer.
  • In a separate bowl, whisk together the egg yolks, sugar, and cornflour until smooth.
  • Slowly pour the hot milk into the egg mixture, whisking constantly to avoid curdling.
  • Pour the mixture back into the saucepan and cook over low heat, whisking continuously, until it thickens.
  • Once thickened, remove from heat and stir in the chopped dark chocolate and vanilla extract. Let the mixture cool to room temperature.

Assemble the Dessert:

  • Once the biscuit base has set, spread a thin layer of cherry jam over the top.
  • Pour the cooled chocolate pastry cream over the jam, spreading it evenly.

Top with Garnish:

  • Garnish with maraschino cherries or fresh cherries for a festive touch.

Chill and Serve:

  • Place the dessert in the fridge for at least 3-4 hours, or preferably overnight, to allow the flavors to meld together.
  • Serve chilled and enjoy the indulgent layers of sweetness!
