Ingredients

For the Cake:

  • 2 large eggs
  • 180g sugar
  • 240ml milk
  • 10 tablespoons light oil (e.g., sunflower or canola)
  • 400g all-purpose flour
  • 100g cocoa powder
  • 1 teaspoon baking powder
  • 2 teaspoons vanilla extract
  • 120ml boiling water

For the Chocolate Glaze:

  • 400ml heavy cream
  • 375g chocolate (dark or milk, chopped)
  • 3 tablespoons butter (or margarine)
  • 50g chocolate flakes (for decoration)

Instructions

1. Make the Cake Batter

  • In a mixing bowl, beat the eggs and sugar until light and fluffy.
  • Gradually add the milk and oil, mixing continuously until smooth.
  • Turn off the mixer and sift in the flour, cocoa powder, baking powder, and vanilla extract. Gently fold the dry ingredients into the wet ingredients until combined.
  • Finally, pour in the boiling water and mix until you have a smooth, lump-free batter.

2. Bake the Cake

  • Grease a 26cm (10-inch) round cake pan with butter or oil.
  • Pour the batter into the pan and spread it evenly.
  • Bake in a preheated oven at 180°C (350°F) for about 45 minutes, or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and let it cool completely before slicing.

3. Prepare the Chocolate Glaze

  • Heat the heavy cream in a saucepan until it starts to simmer (do not boil).
  • Remove from heat, add the chopped chocolate and butter, and stir until smooth and glossy.

4. Assemble the Cake

  • Once the cake has cooled, cut it into slices or leave it whole.
  • Pour the warm chocolate glaze over the top, spreading it evenly with a spatula.
  • Sprinkle chocolate flakes over the glaze for decoration.

Tips for Success

  • Perfect Mixing: Always mix wet and dry ingredients gently to avoid overworking the batter, which could make the cake dense.
  • Baking Tip: Check the cake at the 40-minute mark to prevent overbaking.
  • Customization: Add a pinch of cinnamon or instant coffee to the batter for a unique flavor twist.

Serving Suggestions

  • Serve the chocolate cake warm with a scoop of vanilla ice cream.
  • Pair it with a fresh fruit salad for a refreshing contrast.
  • Add a dollop of whipped cream or a drizzle of caramel sauce for extra indulgence.

Storage and Leftovers

  • Store the cake in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate it, and bring it to room temperature before serving.
  • Freeze individual slices wrapped in plastic wrap for up to a month.

This easy chocolate cake is a dessert everyone will love. Moist, rich, and covered in glossy chocolate glaze, it’s the perfect treat for any occasion. Happy baking!
