Hazelnut Rolls with Sugar Glaze: A Perfect Sweet Treat

Ingredients:

  • 500 g flour
  • 250 ml lukewarm milk
  • Half a cube of fresh yeast
  • 50 g sugar
  • 60 g melted butter

  • 150 g ground hazelnuts
  • 150 g roughly chopped hazelnuts (or walnuts as a substitute)
  • 6 tablespoons sugar
    • 3 tablespoons white sugar
    • 3 tablespoons brown sugar
  • 50 g melted butter
  • 50 ml milk

For the Glaze:

  • 150 g powdered sugar
  • 2-3 teaspoons water (enough to make a thick, spreadable glaze)

Instructions:

1. Prepare the Dough:

In a bowl, combine the lukewarm milk with the fresh yeast and 50 g sugar. Stir until the yeast is dissolved. Let it sit for a few minutes until it becomes frothy.

In another large bowl, mix the 500 g flour, 1 egg, and 60 g melted butter. Add the yeast mixture and knead until a smooth dough forms. Cover the dough and let it rise in a warm place until it doubles in size (about 1 hour).

2. Prepare the Filling:

While the dough is rising, prepare the filling. In a bowl, mix the 150 g ground hazelnuts, 150 g chopped hazelnuts (or walnuts), and 6 tablespoons sugar. Add the 50 g melted butter and 50 ml milk, and stir until well combined.

3. Shape the Rolls:

Once the dough has risen, punch it down and roll it out on a lightly floured surface to a thickness of about 1 cm. Spread the nut filling evenly over the dough.

Roll the dough tightly into a log and cut it into slices about 4 cm wide (you can adjust the size to your preference). Arrange the slices on a baking tray lined with parchment paper, leaving some space between them. Let the rolls rest for another 15 minutes to rise.

4. Bake the Rolls:

Preheat your oven to 160°C (320°F). Brush the top of each roll with a mixture of 1 egg yolk and a little water to give them a golden color when baked. Bake the rolls for about 20 minutes, or until golden brown and cooked through.

5. Glaze and Serve:

While the rolls are still warm, prepare the glaze by mixing 150 g powdered sugar with 2-3 teaspoons of water until you have a thick, spreadable consistency. Drizzle the glaze over the rolls while they’re still warm for a shiny, sweet finish.
