Krümeltorte (Crumbled Cake): A Deliciously Simple Dessert

Ingredients:

For the Cake:

  • 200 g margarine
  • 250 g sugar
  • 6 egg yolks
  • 1 packet vanilla sugar
  • 100 g flour
  • ½ packet baking powder
  • 25 g cornstarch
  • 100 g ground walnuts
  • 100 g grated chocolate (or chocolate chips)

For the Filling:

  • 600 ml heavy cream (for whipping)
  • 100 g sugar
  • 1 packet stabilizer for whipped cream
  • 2 packets vanilla sugar

Optional (for serving):

  • Bananas (if desired, but optional)
  • Cocoa powder
  • Powdered sugar

Instructions:

1. Prepare the Cake:

Start by preheating your oven to 160°C. In a large bowl, cream together the 200 g margarine, 250 g sugar, and the 6 egg yolks with 1 packet of vanilla sugar until fluffy.

2. Add Dry Ingredients:

In a separate bowl, mix together the 100 g flour, ½ packet baking powder, 25 g cornstarch, 100 g ground walnuts, and 100 g grated chocolate. Gradually fold this mixture into the egg and margarine mixture until everything is well combined.

3. Whip the Egg Whites:

In a separate bowl, whisk the 6 egg whites with a pinch of salt until stiff peaks form. Gently fold the whipped egg whites into the cake batter, being careful not to deflate the mixture.

4. Bake the Cake:

Pour the batter into a 26 cm cake pan lined with parchment paper. Bake for about 40 minutes at 160°C or until a toothpick comes out clean when inserted into the center. Let the cake cool completely.

5. Crumble the Cake:

Once the cake has cooled, carefully scoop out about 1 cm of cake from the center of the cake, leaving a 1 cm border around the edge to form a crust. Crumble the removed cake into small pieces and set aside.

6. Prepare the Filling:

In a mixing bowl, whip the 600 ml cream with the 100 g sugar, 1 packet of cream stabilizer, and 2 packets of vanilla sugar until it forms stiff peaks. Gradually fold in the crumbled cake pieces until everything is well combined.

7. Assemble the Cake:

Spoon the cream and cake mixture back into the hollowed-out cake, spreading it evenly. If you like, you can layer sliced bananas at the bottom before adding the filling (this is optional and depends on your preference). Sprinkle the top with cake crumbs, cocoa powder, and powdered sugar for extra flavor and decoration.

8. Chill and Serve:

Let the cake chill in the fridge for at least 2 hours to set. Serve chilled and enjoy the delightful combination of creamy filling, soft cake, and crunchy crumbs.
