Homemade Doner (with Chicken and Pita)

This Homemade Doner recipe will bring the delicious street food to your kitchen! You can fill your warm, soft pita-like bread with marinated chicken, fresh veggies, and a tasty sauce for a satisfying meal.


For the Pita (Lepine):

  • 500g flour
  • 300ml lukewarm water
  • 100g yogurt
  • 1 teaspoon salt
  • Half a cube of fresh yeast

Instructions for Pita:

Prepare the Dough: In a bowl, mix the flour, lukewarm water, yogurt, salt, and yeast. Knead until you get a smooth dough. Let the dough rise until it doubles in size, about 1 hour. Afterward, punch the dough down, let it rise again for about 30 minutes.

Shape the Pitas: Transfer the dough to a lightly floured surface. Divide it into 5 portions and shape each portion into a round ball. Roll each ball into a flat, round shape (like pita bread).

Prepare for Baking: Place the pitas on parchment paper. Using a knife or spatula, lightly score the top of each pita. Mix 2 tablespoons yogurt with 3 tablespoons water and use it to brush the top of the pitas. Sprinkle them with cornmeal and let them rest for about 30 minutes to rise.

Bake: Preheat your oven to the highest setting. Place the pitas (with parchment paper) on the oven rack and bake for 10 minutes or until golden and puffed. The baking time may vary depending on your oven, so keep an eye on them.



For the Chicken (Meso):

  • Chicken breasts (about 500g)
  • 2 tablespoons yogurt
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 onion (finely chopped)
  • 1 garlic clove (minced)

Instructions for Chicken:

Marinate the Chicken: Cut the chicken breasts into thin strips. In a bowl, combine yogurt, olive oil, salt, pepper, paprika, oregano, thyme, chopped onion, and minced garlic. Mix well, then marinate the chicken for at least 1 hour (or up to 2 hours for a deeper flavor).

Prepare the Chicken Roll: After marinating, place the chicken strips on plastic wrap, and tightly roll them up into a log shape. Place the roll in the freezer for about 2 hours to firm up (this makes it easier to slice thinly). If you're in a hurry, you can skip the freezing and immediately fry the chicken after marinating.

Cook the Chicken: After the chicken is firmed up, use a sharp knife to cut the roll into thin slices. Pan-fry the slices on a hot skillet with a little oil until golden brown and crispy.



For the Sauce (Sos):

  • 500g Greek yogurt
  • 1 garlic clove (minced)
  • 4 tablespoons mayonnaise
  • 4 tablespoons olive oil
  • Juice of half a lemon
  • Salt and pepper (to taste)
  • 1 tablespoon dried dill
  • 1 tablespoon finely chopped parsley
  • Optional: Chili (half a teaspoon for heat) or ketchup (for a red sauce)

Instructions for Sauce:

Mix the Sauce: In a bowl, combine the Greek yogurt, minced garlic, mayonnaise, olive oil, lemon juice, salt, pepper, dill, and parsley. If you like spicy, add chili; if you prefer a tangy twist, add a few tablespoons of ketchup for a red sauce.

Refrigerate: Let the suce sit in the fridge for about 30 minutes to allow the flavors to meld together.



Assembling the Doner:

Slice the Pita: Once your pitas are baked, slice them open but leave one side attached to form a pocket.

Fill the Pita: Start with a layer of salad, then add cooked chicken strips. Drizzle the homemade yogurt sauce over the top.
