Kefir and Whole Lemon Cake

This kefir cake, flavored with whole lemon, is a wonderfully aromatic treat with a soft, moist texture. Perfect for any time of day!

Ingredients:

  • 4 medium eggs (at room temperature)
  • 2 cups sugar (300g)
  • 1 cup light oil (130g)
  • 1 small lemon (pulp with zest)
  • 1/2 cup kefir (90g)
  • 400g all-purpose flour (3.5 cups)
  • 2 vanilla packets
  • 3 teaspoons baking powder

Instructions:

Prepare the Wet Ingredients:

  • Beat the eggs with the sugar in a mixer for about 4 minutes until the mixture becomes light and fluffy.
  • Gradually add the oil, lemon pulp with zest, kefir, and sifted flour, baking powder, and vanilla. Mix lightly for another minute.

Prepare the Cake Pan:

  • Grease a cake pan and pour in the batter.

Bake:

  • Preheat your oven to 180°C (350°F), and bake for 45-50 minutes with top and bottom heat.
  • Test with a toothpick to ensure it comes out clean.

Cool and Serve:

  • Let the cake cool for about 10 minutes in the pan before removing it.

This kefir and lemon cake will be one of the most fragrant and delicious cakes you'll ever make! You can substitute the kefir with yogurt, evaporated milk, or fresh milk if needed.
