Lepine are fluffy, soft flatbreads that are quick to make and perfect to serve with various dishes, or just enjoy on their own.
Ingredients:
- 500 g flour
- 300 ml lukewarm water
- 100 ml yogurt
- 1 teaspoon salt
- Half a cube of fresh yeast (about 15 g)
Instructions:
Prepare the Dough:
- In a bowl, combine the flour, lukewarm water, yogurt, salt, and fresh yeast.
- Knead the dough until smooth and elastic.
- Cover the dough and let it rise until it doubles in size (about 1 hour).
- After the dough has risen, gently knead it again and let it rise once more.
Shape the Lepine:
- Dust your work surface with a little flour and divide the dough into small portions.
- Shape each portion into a round or oval flatbread. Don’t overwork the dough to keep them soft and fluffy.
- Arrange the shaped dough on a baking sheet lined with parchment paper.
Prepare for Baking:
- Mix 2 tablespoons of yogurt with 2 tablespoons of water and brush this mixture over the top of the dough.
- Sprinkle with seeds of your choice (like sesame or poppy seeds).
- Let the shaped dough rise a bit more, for about 15-20 minutes.
Bake the Lepine:
- Preheat your oven to its highest temperature.
- Place the baking sheet with the dough on the oven rack (directly on the rack if you want extra crispiness, or use the parchment paper).
- Bake for about 4-5 minutes, or until they’re golden and puffed up. They should bake quickly.
Serve: Once done, remove the lepines from the oven and let them cool slightly before serving. They’re perfect for dipping or as a side to your meal.
