Ramazanske Lepine (Ramadan Flatbreads)

Ramazanske lepine are soft, fluffy flatbreads, perfect for serving alongside meals during Ramadan or any special occasion. Their slightly tangy flavor, thanks to the yogurt in the dough, makes them an irresistible treat. These breads are easy to prepare and come out perfectly soft and warm.

Ingredients:

  • 500 g flour
  • Half a cube of fresh yeast (or one packet of dry yeast)
  • 1 teaspoon salt
  • 300 ml water
  • 100 g yogurt

Instructions:

Prepare the Dough: In a large bowl, combine the 500 g flour, salt, and yeast. Gradually add 300 ml water and 100 g yogurt, mixing until the dough comes together. Knead the dough for a few minutes until it is smooth and elastic.

Let the Dough Rise: Cover the dough and leave it in a warm place to rise. Let it double in size, which should take about an hour. Once it has risen, punch the dough down, knead it briefly, and then allow it to rise again until doubled in size.

Shape the Lepine: Once the dough has risen for the second time, transfer it to a floured work surface. Divide the dough into 5 equal portions. Shape each portion into a flat round bread (lepina).

Prepare for Baking: Place the shaped lepine onto a baking tray lined with parchment paper. Mix a little yogurt and water to make a coating, and brush this mixture over the top of each lepina. Lightly score the tops of the lepine with a knife and sprinkle with cornmeal (or any coarse flour) for extra texture.

Rest the Dough: Allow the shaped lepine to rest for about 15 minutes before baking.

Bake the Lepine: Preheat your oven to the highest temperature. Place the tray of lepine in the oven and bake for 5 minutes on the top rack. The lepine should puff up and turn lightly golden.

Finish and Serve: Once baked, remove the lepine from the oven and cover them with a clean kitchen towel for a few minutes to soften. Serve warm as a side with your favorite dishes or enjoy on their own.
