Ingredients

For the Dough:

  • 600g all-purpose flour
  • 250ml lukewarm water
  • ½ teaspoon salt
  • 1 cup brown vinegar
  • 1 glass of sunflower or vegetable oil
  • Extra oil for greasing the dough
  • Optional: a little butter for greasing the dough

For the Filling:

  • 1 bunch of chard (seskula)
  • 2 cloves garlic, minced
  • 1 bunch of fresh dill
  • 1 bunch of green onions
  • 500g spinach, washed and chopped
  • 1 bunch of fresh parsley (myronia)
  • 1 bunch of hot dog herbs (optional)
  • 250g feta cheese, crumbled
  • 250g soft cheese or ricotta cheese
  • 4 scrambled eggs
  • Salt and black pepper to taste
  • Sesame seeds (for garnish)
  • Blackberries or black currants (optional)
  • ½ cup vegetable oil (for the filling)

Instructions

For the Dough:

  1. In a large bowl, combine the lukewarm water, salt, oil, and vinegar. Stir to mix.
  2. Gradually add the sifted flour, mixing until it forms a soft, supple dough.
  3. Knead the dough on a lightly floured surface for a few minutes until smooth.
  4. Cover the dough with a cloth and let it rest for 30 minutes.
  5. Once rested, divide the dough into 6 portions for the 6 layers of dough (3 layers for the top and 3 layers for the bottom).

For the Filling:

  1. In a large pan, heat a little oil and sauté all the chopped vegetables (chard, spinach, dill, green onions, parsley, and optional herbs) until soft. Make sure the mixture is not too watery.
  2. In a bowl, whisk the scrambled eggs with a pinch of salt.
  3. Add the sautéed vegetables to the eggs and mix well.
  4. Stir in the crumbled feta and soft cheese (ricotta), and season with salt and black pepper.

Assembling the Pie:

  1. Preheat the oven to 180°C (350°F).
  2. Roll out each portion of dough into a large circle, about the size of a plate.
  3. Grease a baking pan with oil and place the first dough layer, making sure it hangs over the sides of the pan. Brush the surface with some butter if you like.
  4. Add the vegetable and cheese mixture on top, spreading it evenly.
  5. Pour the whisked eggs and cheese mixture over the filling, ensuring everything is covered.
  6. Fold the edges of the dough over the filling and brush them with a little oil or butter.
  7. Repeat the process with the second dough layer, crumbling it slightly on top for texture. Press down the edges to seal the pie.
  8. Brush the top of the pie with a little oil, and optionally, sprinkle with sesame seeds and blackberries for garnish.
  9. Bake in the preheated oven for 1 hour or until the dough is golden and crispy, and the filling is fully cooked.
