Tuna with Spicy Tomato-Pepper Sauce & Salmon with Potatoes and Tomatoes

This dinner is a delicious, light, and satisfying combination of flavors: spicy, tangy tuna paired with savory potatoes, tomatoes, and succulent salmon. Enjoy your beautiful evening with this hearty meal!

Ingredients:

  • 2 tuna steaks
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 2 large tomatoes, chopped
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika (smoked or regular)
  • 1 teaspoon chili flakes (adjust to your spice preference)
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions:

  1. Heat olive oil in a large pan over medium heat. Season the tuna steaks with salt and pepper.
  2. Sear the tuna steaks for 2-3 minutes per side, or until cooked to your preferred doneness. Remove from the pan and set aside.
  3. In the same pan, add the chopped onion and garlic, cooking for about 2 minutes until soft.
  4. Add the bell pepper and cook for another 2-3 minutes, until tender.
  5. Stir in the chopped tomatoes and tomato paste, and cook for 5-7 minutes, until the tomatoes break down and create a sauce.
  6. Add the paprika, chili flakes, salt, and pepper. Stir well to combine and simmer for a few minutes to develop the flavors.
  7. Return the tuna steaks to the pan, spooning the sauce over the top. Let it cook together for 2-3 minutes, allowing the tuna to soak up the flavors.

For the Salmon with Potatoes and Tomatoes:

Ingredients:

  • 2 salmon fillets
  • 4 small potatoes, thinly sliced
  • 2 tomatoes, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Lemon wedges (for serving)

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. Arrange the sliced potatoes in a baking dish, drizzle with olive oil, and season with salt, pepper, thyme, and garlic powder. Toss to coat.
  3. Place the baking dish in the oven and roast the potatoes for 15-20 minutes, or until they start to soften.
  4. While the potatoes are roasting, season the salmon fillets with salt, pepper, and a drizzle of olive oil.
  5. After the potatoes have cooked for 15-20 minutes, remove the dish from the oven and add the sliced tomatoes around the potatoes.
  6. Place the salmon fillets on top of the potatoes and tomatoes.
  7. Return the dish to the oven and roast for an additional 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  8. Serve with lemon wedges on the side.
