Ingredients:
- 700g flour (you can add some whole wheat flour if you'd like)
- 200g boiled potatoes
- 20g fresh yeast (no dry yeast, it won’t work!)
- 1 teaspoon sugar
- 2 teaspoons salt
- 100g butter
- 2 tablespoons oil
- 300ml lukewarm water (maybe an additional 50ml, depending on the flour)
Directions:
Prepare the Potatoes: Boil the potatoes until they are soft. Then, mash them through a sieve or potato ricer, add the butter, and mix them together until smooth.
Make the Dough: Sift the flour into a bowl. Add the fresh yeast, sugar, and pour in half of the lukewarm water. Add the mashed potatoes, oil, salt, and the rest of the water. Mix everything together and knead the dough until it’s soft.
Resting and Folding: Transfer the dough onto a clean work surface. Leave it for a few minutes so the flour can work its magic. In the meantime, lightly oil a bowl and place the dough inside. Cover it and let it rise until it doubles in size (about 20 minutes). After 20 minutes, dampen your hands, lift the dough from the sides, and fold it under. Do this a couple more times, ensuring the dough doesn't over-prove.
Preheat the Oven: Preheat your oven to 200°C (390°F). Place a heavy pot with a lid inside to heat up as well.
Shape the Dough: After the dough has doubled in size, transfer it onto a work surface. Without overworking it, gently shape the dough into a round loaf.
Transfer to the Pot: Carefully remove the hot pot from the oven (be cautious not to burn yourself). Lightly flour the pot and transfer the shaped dough into it. You can score the top of the dough with a sharp knife if you want a decorative effect. Cover the pot with the lid.
Baking: Bake the bread in the preheated oven for about 35 minutes at 200°C. If the top is still pale after that, leave it for another 10 minutes. Afterward, remove the lid and lower the oven temperature to 170°C (340°F), and bake for another 10 minutes to get a golden-brown crust.
Cool the Bread: Once the bread is done, take it out of the pot and place it on a cooling rack to cool at room temperature.
